Nick Barnard, co-founder of Rude Health, is an advocate of going back to our roots to discover the healthy eating habits of our ancestors. In this session he will discuss the ideas behind his brilliant new book Eat Right and demo a few recipes. Among other things, he will teach you how to make your own super charged Ghee, the traditional way.
The talk & demo will be followed by a lovely lunch prepared by Maddie drawing on the recipes in Nick’s book.
Against popular belief, ghee is more than just clarified butter. Ghee is clarified butter that has been heated at a higher temperature and for longer, which not only separates or evaporates the milk proteins but drives off most of the water too. Ghee has a higher smoke point, between 200-260 degrees, making it a very useful animal fat, capable of withstanding high cooking temperatures, and with a naturally very long shelf life too.
