Nick, the founder of Rude Health will be giving an educational talk about fats/ghee and doing a demonstration of how to make it. Everyone will leave with a stunning Le Parfait jar of ghee to take home. There will also be some delicious biodynamic wine and charcuterie for you to snack on throughout.
This will be the first in Rude Health’s ‘Eat right, stay brilliant’ discovery series. More to follow monthly in 2017.

Against popular belief, ghee is more than just clarified butter. Ghee is clarified butter that has been heated at a higher temperature and for longer, which not only separates or evaporates the milk proteins but drives off most of the water too. Ghee has a higher smoke point, between 200-260 degrees, making it a very useful animal fat, capable of withstanding high cooking temperatures, and with a naturally very long shelf life too.
Chilled ghee easily keeps for one year or more. In India, where ghee originated, you can find aged ghee that is over 100 years old. Ageing ghee is said to increase its nutritional and healing powers. Learn to separate water and whey from butter and be ghee-ful and gleeful!
