By Rude Health Porridge Championship contestant Camilla, who was our Waitrose winner and came down from Kent for the occasion. Camilla’s Almond milk porridge, topped with a sprinkle of nutmeg, roasted apricots and homemade granola was textured, simple and oh so autumnal.

Ingredients: 

Porridge

220g Rude Health Daily Oats

boiling water

300ml Rude Health Almond Drink

1 pack apricots fresh or ready to eat dried

1 vanilla stick

1 fresh nutmeg

honey

Granola

1 cup oats

½ cup seeds

½ cup raw almonds

½ tsp vanilla extract

½ egg white

1/3 cup coconut oil

1/3 cup honey

Method:

  1. Porridge: combine the oats with the almond drink and water, then add a touch of grated nutmeg and stir over the heat until thick.
  2. Granola: mix the dry ingredients together.  Combine with the wet ingredients. Stir and bake on a roasting tin at 180 degrees Celsius for 20 mins. Allow to cool and keep in air tight jar until needed.
  3. Apricot: cut the dried apricots and put in a pan with the fresh vanilla pod and a little water. Heat until reduced & sticky.
  4. Layer the almond porridge, then apricots and finally granola on top.
