How to make Banana & Dark Chocolate Sprouted Spelt Muffins

Spelt, Banana and Dark Chocolate. A love affair like no other.

Ingredients (serves 12)

  • 450g Rude Health Sprouted Spelt Flour
  • 1/2 tsp Salt
  • 2 tsp Baking powder
  • 250g  Coconut sugar
  • 170g Unsalted butter
  • 3 Eggs
  • 2 tsp Vanilla extract
  • 475ml Rude Health Oat Drink (or Rude Health Tiger Nut Drink for a naturally silky sweet flavour)

Method

  1. Add Rude Health Sprouted Spelt Flour to mixing bowl
  2. Add Salt, Baking Powder, Coconut Sugar
  3. Give it a mix
  4. In a separate bowl, whisk 3 Eggs
  5. Melt Unsalted butter and add to the Eggs
  6. Add Vanilla Extract
  7. Splash in 475ml of Oat Drink or Tiger Nut Drink
  8. Little by little, add the wet mixture to the dry
  9. Add the mashed bananas and chopped up dark chocolate
  10. Stir and mix carefully
  11. Transfer the mixture into muffin trays
  12. Bake at 180° for 20 minutes
  13. Leave to cool for 15 minutes and then enjoy.
