This Berry Blast Porridge is bursting with juicy fresh redcurrants, rasberries and strawberries that are nutrient rich and packed with antioxidants that will have you bouncing into the day ahead.

Ingredients

100g of Rude Health Daily Oats Porridge

500ml milk, water or Rude Health Brown Rice Drink

Handful of strawberries quartered

Handful of raspberries whole

100g Redcurrants

50g Caster sugar

1 Orange juice and zest

Method

1. Destalk the redcurrants, place in a small saucepan with the sugar, orange zest and juice and simmer for 5 – 10 minutes, or until the sugar has dissolved. Leave to cool slightly.

2. Make the porridge by combining the oats and water (or milk if you prefer it creamier) into a pan.

3. Bring to the boil slowly and simmer gently for 3 – 4 minutes, stirring occasionally.

4. Divide the porridge into two bowls, spoon the redcurrant compote on top and add the strawberries and raspberries to finish. Enjoy!
