For the porridge:
For the compote:
Pinch of cinnamon
Handful of blueberries
Handful of pumpkin seeds
Tbsp. maple syrup
- Rinse and drain the blueberries. Chuck them in a pan, over a high heat. Add a tbsp of water. Keep stirring until the blueberries are soft. Press down on the berries so they pop and make a thick syrupy juice. Take it off the heat and transfer into a bowl, cover to keep warm.
- Place the Rude Health Fruity Date Porridge and Rude Health Coconut Drink and water in a pan and bring to the boil.
- Turn down the heat and simmer for 3-4 minutes, stirring regularly until smooth and creamy. If it’s too thick, add another splash of the Rude Health Coconut Drink until you’ve got the consistency you like.
- Serve with the compote and a generous handful of pumpkin seeds, mascarpone and maple syrup to finish.
