INGREDIENTS:

For the porridge:

55g Rude Health Fruity Date Porridge

100ml Rude Health Coconut Drink

100ml water

 

For the compote:

200g blueberries

Pinch of cinnamon

 

Additional toppings:

Tbsp. mascarpone

Handful of blueberries

Handful of pumpkin seeds

Tbsp. maple syrup

 

METHOD:

  1. Rinse and drain the blueberries. Chuck them in a pan, over a high heat. Add a tbsp of water. Keep stirring until the blueberries are soft. Press down on the berries so they pop and make a thick syrupy juice. Take it off the heat and transfer into a bowl, cover to keep warm.
  2. Place the Rude Health Fruity Date Porridge and Rude Health Coconut Drink and water in a pan and bring to the boil.
  3. Turn down the heat and simmer for 3-4 minutes, stirring regularly until smooth and creamy. If it’s too thick, add another splash of the Rude Health Coconut Drink until you’ve got the consistency you like.
  4. Serve with the compote and a generous handful of pumpkin seeds, mascarpone and maple syrup to finish.
