In true Rude Health Porridge Championships style, Niomi Smart takes a classic sweet treat and turns it into a delicious bowl of porridge. This recipe was taken from her new book Eat Smart.

 

Ingredients

100g (1 cup) rolled oats

250ml (1 cup) Rude Health Ultimate Almond Drink

4 fresh cherries, stoned

1 tbsp almond butter

1 tbsp ground almonds

1 tsp organic vanilla extract 1 tbsp maple syrup

 

Method

  1. Put the oats, almond milk and 250ml (1 cup) water into a small saucepan and set over a medium heat.
  1. Roughly chop the cherries and stir into the saucepan with the almond butter, ground almonds, vanilla extract and maple syrup. Cook for 5-6 minutes, or until thick and creamy, stirring regularly.

Serving ideas:

A small handful of chopped almonds. Fresh cherries, stoned and halved.
