After scrupulously perfecting oat soaking, porridge stirring and speciality recipe devising we are delighted to announce that Nick Barnard, co-founder of Rude Health, scooped the prestigious title of Speciality World Porridge Champion at the 20th World Porridge Championships 2013 at Carrbridge Inverness-shire using this recipe.
100g of Rude Health Fruity Date Porridge
500ml Whole Milk
Coconut Palm Sugar
1. Make the porridge by combining the oats and milk into a pan. For best results, soak over night.
2. Bring to the boil slowly and simmer gently for 3 – 4 minutes, stirring occasionally
3. Divide the porridge into two bowls and serve.
Tip from the world champion: For an extra creamy and indulgent porridge, add a dollop of thick cream and a sprinkling of coconut sugar.
