Rye Oaty with Basil Pesto and Tomato. Delicious, fresh basil pesto compliments the deep nutty flavour of our Rye Oatys. Perfect with a slice of fresh juicy tomato.
1-2 Beef Tomatoes
2 big handfuls of fresh basil leaves
2 tbsp fresh grated parmesan
2 large garlic cloves, crushed
50g pine nuts
50ml extra virgin olive oil
salt and pepper to taste
1. Place the pine nuts in a pan over a medium heat and toast until golden.
2. Combine the basil leaves, garlic, oil and parmesan and blitz in a food processor until it becomes a thick paste. Add salt and pepper to taste.
3. Serve spread generously on Rye Oatys with a slice of tomato.
