Spelt Oaty with Gravalax and Beetroot Relish combincation is the perfect Scandi snack. Rough and ready beetroot relish with succulent gravalax.

Oaty & beetroot relish

Serves 4

2 cooked, peeled medium sized beetroots

handful of fresh parsley

1 small red onion

1-2 tsp wholegrain mustard

2 tsp olive oil

½ lemon

Rude Health Spelt Oatys

3-4 slices of Gravalax


1. Finely chop the onion and parsley. Finely dice the beetroot and mix together with the parsley and onion.

2. Squeeze the juice of half a lemon into the mixture, stir in the oil and 1-2 teaspoons of mustard, to your taste.

3. Serve with Spelt Oatys and Gravalax.
