Beetroot, Halloumi & Cashew Curry
- 75g cashews
- 1 tbsp coconut, sunflower or olive oil
- 300g halloumi
- 1 onion
- 2 tomatoes
- Sea salt
- 500g beetroot
- 2 garlic cloves
- A thumb of ginger
- 2 tsp korma masala spice mix
- 500ml Rude Health Cashew Drink
- 300g brown basmati rice
- 600ml boiling water
- A handful of coriander, leaves only
