Sprouted Spelt Muffins

Spelt, Banana and Dark Chocolate Muffins. A love affair like no other. You can also sub in cherries instead of the dark chocolate.

(Serves 12)



450g Rude Health Sprouted Spelt Flour

475ml Rude Health Oat Drink (or Rude Health Tiger Nut Drink for a naturally silky sweet flavour)

1/2 tsp Salt

2 tsp Baking powder

250g  Coconut sugar

170g Unsalted butter

2 Banana (very ripe, Mashed )

150g Dark chocolate /Chocolate chips

3 Eggs

2 tsp Vanilla extract



  1. Add Rude Health Sprouted Whole Spelt Flour to mixing bowl
  2. Add Salt, Baking Powder, Coconut Sugar
  3. Give it a mix
  4. In a separate bowl, whisk 3 Eggs
  5. Melt Unsalted butter and add to the Eggs
  6. Add Vanilla Extract
  7. Splash in 475ml of Oat Drink or Tiger Nut Drink
  8. Little by little, add the wet mixture to the dry
  9. Add the mashed bananas and chopped up dark chocolate
  10. Stir and mix carefully
  11. Transfer the mixture into muffin trays
  12. Bake at 180° for 20 minutes
  13. Leave to cool for 15 minutes and then enjoy.
