Carrot Cake Porridge

Carrot cake porridge: pudding for breakfast. Yes yes yes.

Niomi Smart, lifestyle blogger and vlogger phenomenon. Author of hot new release, and aptly named Eat Smart, her first plant-based cookbook. Debuting a recipe from Eat Smart, Naomi brewed a bold carrot cake porridge with an artful dash of orange zest.



100g Rude Health Daily Oats
250ml Rude Health Ultimate Almond
250ml water
1 carrot, peeled and grated
1 tbsp date syrup or maple syrup
¼ tsp each of ground cinnamon, ground nutmeg and ground ginger
30g raisins


  1. Put the oats, almond drink and water into a small saucepan and place over a medium heat.
  2. Stir in most of the carrot along with the syrup, cinnamon, nutmeg, ginger and raisins. Cook for 5-7 minutes, or until thick and creamy, stirring regularly.
  3. Serve sprinkled with the remaining carrot and any other toppings that you like such as raw walnuts.
