For all the swavoury lovers, this one’s for you. A sweet rice dish, seasoned with spices and dates. Delicious paired with chargrilled vegetables.

Ingredients

500ml Rude Health Almond Drink or Hazelnut Drink 

200ml water 

200g basmati rice 

3 tbsp brown sugar 

2 tbsp maple syrup 

1 tsp cardamom 

¼ tsp saffron 

1 tbsp rose water 

5 medjool dates 

1 tbsp coconut oil 

Rose Petals 

Lavender 


Method

  1. Boil the Almond Drink with water. Once boiling add rice. Mix well and cook for about 11 minutes, uncovered. 
  2. Drain the rice and mix with the sugar, syrup, cardamom, saffron and rose water. 
  3. Cut the dates very tiny and mix with the rice. 
  4. Melt the coconut oil in the frying pan and add the rice mixture. 
  5. Bake the rice on low heat for 10 minutes. 
  6. Place it upside down on a plate and garnish with rose petals and lavender.
