Sprouted Spelt Cookies

Sprouted Spelt Flour and Sprouted Oats add a nourishing and tasty twist to classic oat cookies. We advise making an extra batch, as they tend to disappear quickly.

1cup/ 120g Rude Health Spelt Flour

1cup/ 120g Rude Health Sprouted Oats

1cup/ 120g coconut sugar

1/2 cup/ 50g desiccated coconut

125g butter

4tbs/ 80g honey

Pinch of salt flakes

1/2 tsp baking soda


  1. Preheat your oven to 180c. Line a baking tray with baking parchment.
  2. Mix the Rude Health Sprouted Spelt Flour, Rude Health Sprouted Oats, coconut sugar, desiccated coconut and sea salt in a bowl.
  3. In a small sauce pan, slowly melt the butter with the honey until combined and then take it off the heat. Add in the baking soda.
  4. Pour the wet mix into the dry mix and combine until a dough is formed.
  5. Roll the dough firmly into balls approximately the size of a cherry tomato.
  6. Place the balls on the baking tray. Press the balls gently down with wet fingertips to flatten them slightly and then bake for 6-8 minutes or until they are lightly golden.
  7. The cookies will harden as they cool. Store in an air tight container for up to one week.
