Trio of Soups

When only hot food will do, soup is the answer. Pop in in a flask and take it anywhere, adding your garnish at the last moment to give your gourmet food the restaurant look.

Recipe

PUMPKIN SOUP INGREDIENTS:

 

200ml Rude Health Coconut Drink

300ml vegetable stock

600g pumpkin

1 apple

1 red chilli

10g or small bunch parsley

1 tbsp olive oil

2 tbsp pumpkin seeds

COURGETTE SOUP INGREDIENTS:

200ml Rude Health Oat Drink

300ml vegetable stock

1 courgette

1 head of broccoli

2 cloves of garlic

10g fresh mint

1 tbsp olive oil

2 tbsp oats

TOMATO SOUP INGREDIENTS:

200ml Rude Health Almond Drink

300ml vegetable stock

1 red onion

4 tomatoes

4 grilled red peppers

10g basil

1 tbsp olive oil

2 tbsp almonds


Method

METHOD:

  1. Bring the vegetable stock to a boil in a large pan then add half of the Rude Health drink.
  2. Chop the vegetables, add them to the pan and simmer for about 15 minutes.
  3. Add half of the herbs to the pan and blend. Pour into bowls and garnish with a swirl of your Rude Health Drink of choice, the oil, the fresh herbs and pumpkin seeds, oats or almonds.
