Almond Milk Porridge with Roasted Apricots and Homemade Granola

By Rude Health Porridge Championship contestant Camilla, who was our Waitrose winner and came down from Kent for the occasion. Camilla’s Almond milk porridge, topped with a sprinkle of nutmeg, roasted apricots and homemade granola was textured, simple and oh so autumnal.


Recipe

Granola

1 cup Rude Health Daily Oats
½ cup seeds
½ cup raw almonds
½ tsp vanilla extract
½ egg white
1/3 cup coconut oil
1/3 cup honey

Porridge

220g Rude Health Daily Oats
300ml Rude Health Almond Drink
Boiling water
1 pack apricots fresh or ready to eat dried
1 vanilla stick
1 fresh nutmeg
Honey


Method

  1. Porridge: combine the oats with the almond drink and water, then add a touch of grated nutmeg and stir over the heat until thick.
  2. Granola: mix the dry ingredients together.  Combine with the wet ingredients. Stir and bake on a roasting tin at 180 degrees Celsius for 20 mins. Allow to cool and keep in an airtight jar until needed.
  3. Apricot: cut the dried apricots and put in a pan with the fresh vanilla pod and a little water. Heat until reduced & sticky.
  4. Layer the almond porridge, then apricots and finally granola on top.
