By Rude Health Porridge Championship contestant Camilla, who was our Waitrose winner and came down from Kent for the occasion. Camilla’s Almond milk porridge, topped with a sprinkle of nutmeg, roasted apricots and homemade granola was textured, simple and oh so autumnal.
1 cup Rude Health Daily Oats
½ cup seeds
½ cup raw almonds
½ tsp vanilla extract
½ egg white
1/3 cup coconut oil
1/3 cup honey
- Porridge: combine the oats with the almond drink and water, then add a touch of grated nutmeg and stir over the heat until thick.
- Granola: mix the dry ingredients together. Combine with the wet ingredients. Stir and bake on a roasting tin at 180 degrees Celsius for 20 mins. Allow to cool and keep in an airtight jar until needed.
- Apricot: cut the dried apricots and put in a pan with the fresh vanilla pod and a little water. Heat until reduced & sticky.
- Layer the almond porridge, then apricots and finally granola on top.
