Caramelised Peach and Pomegranate Porridge

Soft and gooey caramelised peach and pomegranate porridge. Don’t mind if I do.


Recipe

Porridge

50g (½) cup Rude Health 5 Grain 5 Seed Porridge Oats
250ml (1 cup) water
½ Banana, mashed
A pinch of salt
A splash of Rude Health Dairy Alternative Drink or organic whole milk

Topping

½ Peach, sliced
A handful of pomegranate seeds
A handful of flaked almonds
1 teaspoons of coconut oil
2 teaspoons of coconut sugar


Method

1. In a small pan gently melt the coconut oil with 1 teaspoon of coconut sugar

2. Add the chopped peach and allow to simmer for 1-2 minutes then give everything a good mix and heat for a further 1-2 minutes stirring continuously

3. Once the peaches are golden and slightly soft transfer them onto a small dish and add another teaspoon of coconut sugar and cover

4. Use the same pan to cook your oats. Heat the oats with half of the water on medium temperature

5. Once the oats start to simmer and most the liquid has been absorbed turn down the heat and add the remaining liquid and salt

6. Mash the banana and add it to the pan, stirring it through

7. Once all the liquid has been absorbed add a final splash of milk, give everything one last mix and transfer into a bowl

8. Top with the gooey and golden caramelised peach (with all the sweet juices too), pomegranate seeds and a handful of flaked almonds
