Raspberry Rude Health Bircher Muesli with Summer Berries and Manuka Honey

With gojis, berries and manuka honey, this bowl is packed full of the good stuff.

No cooking needed. Simply mix, admire, then dive on in.


Recipe

Bircher muesli

(Serves 2)

130g Rude Health Soft and Fruity Bircher Muesli
100g Rude Health Cashew Drink
100g organic apple juice
130g thick raspberry Greek yoghurt
A small handful of raspberries
1 tbsp manuka honey
1 tsp golden linseeds
1 tsp goji

Toppings

4 strawberries (quartered)
A small handful of blueberries
A small handful of raspberries


Method

  • In a large bowl add the apple juice, Cashew Drink, raspberry yoghurt and the raspberries and whisk well.
  • Stir in the Bircher Muesli.
  • Scoop the Bircher mixture into serving dishes – allow space for the fruit toppings to be added before serving.
  • Leave the mix to sit for 10 minutes to absorb all of the liquid goodness before adding the toppings.
  • Scatter the Bircher with the linseeds, goji berries and drizzle with honey.
  • Top with fresh berries and serve.
