Crispy Apple and Almond Fritters

These apple and almond fritters are a texture-lover’s dream. With a creamy cloud-like centre from the Almond Drink and a crispy glass-like crunch outside from the caramelised apple. You can’t have just one. 

Cook time: 20 mins 

 

INGREDIENTS

200ml Rude Health Almond Drink, Plus 3 Tbsp
200g Sprouted Spelt Flour
50g Daily Oats
3 Granny Smith Apples (350g)
3cm Knob of Ginger
½ Lemon
3 Tbsp Light Brown Sugar
1 Tsp Cinnamon
1 Tsp Baking Powder
200g Icing Sugar

     

     

    METHOD

    Step 1.

    Chop up the apples into cubes, leave the skins on. Pop these into a bowl and grate in the ginger.

     

    Step 2.

    Add the juice of half a lemon with the light brown sugar, cinnamon, plain flour, oats, baking powder, 200ml of Rude Health Almond Drink, and ½ tsp salt. Mix well to make a thick batter.

     

    Step 3.

    Add vegetable oil to a large pan (roughly enough to deep-fry your fritters in) and bring it to a medium heat.

     

    Step 4.

    Using two spoons, spoon large blobs of mixture into the oil and fry for 5-6 mins until dark brown but not burnt. A slower medium fry will make them crispier.

     

    Step 5.

    While your fritters are crisping up, make your glaze by whisking icing sugar with 3 tbsp of Rude Health Almond Drink to form a smooth paste.

     

    Step 6.

    Drain your fritters, allowing them to cool slightly on paper towels to remove any excess oil, before dunking them in the glaze. If you don’t want them too sweet, drizzle the glaze on instead.

     

    Step 7.

    Enjoy hot with a cup of tea.
