Easy Banana Pancakes

Shake up your autumn mornings with these easy banana pancakes, made deliciously light and nutty with our Almond Drink.

Because breakfast should be enjoyed, not just ticked off the list. 

 

INGREDIENTS 

 

Pancake mix:

2 cups Rude Health® Organic Almond Drink

1 ripe banana

1 tbsp vegetable oil

2 tsp baking powder

2 cups plain flour

Pinch of salt

 

Topping:

1 banana

1 tsp cinnamon

1 tsp brown sugar

1 tbsp butter

Handful of strawberries and blueberries (or other fruits of your choice)

 

METHOD

Step 1.

Mash your ripe banana, then add your Rude Health® Almond Drink and combine, adding 1 tbsp of vegetable oil

 

Step 2.

Combine your flour, baking powder, and salt, and then pour in the wet ingredients. Whisk together until combined. You should have a thick pancake mixture. If it's too thick, just add more Almond Drink.

 

Step 3.

Add a scoop of your pancake mixture into a buttered pan, and when bubbles start to form, they are ready to flip. Continue until you have your stack of pancakes.

 

Step 4.

Slice your banana lengthways and split in half, and add to a separate pan with your butter, brown sugar, and cinnamon. Cook until the banana is caramelised.

 

Step 5.

Add your banana to your stack of pancakes along with strawberries and blueberries.
