The Overnight
A mixologist’s take on overnight oats. Sweetness balanced with coffee and lemon makes this the silky breakfast treat you didn’t know you needed.
INGREDIENTS
150ml Rude Health Pistachio Barista
25g Rude Health Bircher Muesli
40ml cold brew coffee
1tsp lemon curd
Pinch of salt
1 ice cube
METHOD
Step 1.
Mix together half of the Pistachio Barista with the Bircher Muesli in a bowl and leave in the fridge overnight.
Step 2.
Add the rest of the Pistachio Barista to the overnight mixture and strain through a sieve.
Step 3.
Add the cold brew coffee, lemon curd and a pinch of salt.
Step 4.
Shake and strain with 1 ice cube. Serve in a tall cocktail glass with lemon curd rim. If you don’t have a shaker, you can use a jam jar.
